Steak and Sauteed Veggies

When you are trying to lose weight – and as part of a healthy lifestyle – you should be choosing the leanest cuts of beef. This main meal suggests sirloin tips, which are very lean and are still flavorful. Top round steaks are also lean and quite tender. Top sirloin may need marinating but is also delicious.
1 ¾ pound sirloin tips
2 leeks
2 large carrots, peeled.
2 medium red peppers
2 large green peppers
2 medium summer squash
1 large head cauliflower
2 cups spinach
3 cloves of garlic
1 ½ tbsp. olive oil
1 tsp. ground cumin
½ tsp. paprika

DIRECTIONS
  1. Dice the peppers, carrots, squash and leeks; shred the cauliflower; chop the spinach; mince the garlic.
  2. Cut the steak into 1’ strips.
  3. Heat the oil on medium in a large sauté pan.
  4. Add the leeks, garlic, carrot, squash and peppers. Season with pepper.
  5. Sauté for about 10 minutes, stirring occasionally.
  6. Add the cumin, paprika, shredded cauliflower and spinach. Mix well.
  7. Sauté for another 5-8 minutes.
  8. Remove from the skillet and place to the side.
  9. Add the steak slices to the hot pan and stir-fry 2-3 minutes or until no longer pink.
  10. Plate the hash and place the steak strips on top.
