Green Eggs and Ham Omelet

If you eat your main meal in the evening, an omelet might seem an odd choice, but sometimes you just have to make a leap of faith. The ever-avant French are keen on the idea, after all, and we promise that you will so like our Green Eggs and Ham Omelet (with OurSkinny's "Almost Home" Fries).

INGREDIENTS
2 large eggs
1 large egg white
2 cups kale, ends removed
1 slice slim cut 2% milk sharp cheddar cheese
2 slices thinly-sliced deli ham
1 tsp. butter
2 tbsp. water
 
For the “Almost Home” Fries:
½ cup Daikon radish, cut into ½ inch cubes
2 tbsp. onion, diced
¼ red bell pepper, diced
½ tsp. olive oil
Pinch of cayenne pepper
Pinch of garlic powder

DIRECTIONS
  1. In a nonstick skillet, heat one tablespoon of water over medium-high heat.
  2. Add kale and cook, tossing, until completely wilted (about 1 minute).
  3. Transfer to a colander to drain, pressing out as much water as possible. Finely chop the kale.
  4. In a glass bowl, crack the eggs, add one tablespoon of water and whisk.
  5. Add the chopped kale and whisk to combine.
  6. Return skillet to heat and melt butter, tilting to coat pan.
  7. Add egg mixture and spread out with a rubber spatula.
  8. Cook, moving around gently with a rubber spatula, until eggs begin to thicken about 30 seconds.
  9. With spatula, pull edges of omelet in toward center, tilting pan so any uncooked eggs flow underneath.
  10. Cook until just set, 15 to 30 seconds.
  11. Arrange cheese and ham on one side of the top of omelet. Cook until cheese just starts to melt.
  12. With the spatula, fold omelet in half. Transfer to a plate.

For the “Almost Home” Fries:
  1. In a nonstick skillet, heat oil over medium high heat.
  2. Reduce the heat and add the radishes, onions, and red peppers.
  3. Cover and cook for 5-7 minutes.
  4. Uncover and add the spices.
  5. Stir consistently until radishes are golden brown in color, about 2-3 minutes.
